Industrial Bread Making Machine Calling All BAKERS, Or Those Who Know About Bread Making In Commerical Quantities...! ...Process Times?!?

Calling all BAKERS, or those who know about bread making in commerical quantities...! ...Process Times?!? - industrial bread making machine

Im on the search function in the process of baking bread in a bakery (industry, which supplied it is the bread instead), I is a visit today and learned (I please correct if I'm wrong!)
First, the flour is mixed
Bread is, if broken in the machine
thence along the conveyor, the intermediate test
Baker put the bread on the shelves and put them in the slowing of the evidence

We have delivered frozen breadsticks. From the refrigerator, put in bread and fridge / Retarder and forth about 12 hours. Then go into the test system for an hour. Then bake 11 minutes. Hope this helps
